How difficult could it be to find a simple banana pudding recipe? As it stands, it's a pain in the neck. The recipes either call for a package of vanilla pudding or a box of Nilla Wafers. Now, I like Nilla Wafers, and I'm not above whipping up a box of instant vanilla pudding, but I have a surplus of bananas and limited ingredients. After tonight's endeavor, I discovered that banana pudding actually has very little to do with bananas.
After an hour of failed searching, online and in our own cookbooks, I settled on a recipe and made a few changes: Splenda is not a substitute for sugar, we will not be using Nilla Wafers, I prefer a full teaspoon of vanilla to half (and I may even bump it up to a tablespoon) and I don't feel like separating eggs, so we'll be using two full eggs instead of three large egg yolks.
